KA PAO, GLASGOW

So the awesome team at Ox and Finch have created Ka Pao, a pop-up serving kickass Southeast Asian-inspired food in the super cool Acid Bar at SWG3. After their first residency sold out completely, they have recently renewed their residency and will be open every Friday, Saturday, Sunday.

Head Chef Sandy Browning spent time working at the Michelin-starred Nahm in Bangkok so he really knows what he’s doing. He uses some very traditional cookery techniques from the region in some dishes, and in others, fuses more modern methods and influences.

If you managed to get into the last residency and think you have tried it all and don’t need to go back, think again. Firsty, this time it isn’t ticketed, you can just book online. Secondly, it isn’t a set menu, you can choose from their regularly changing menu on the night.

And thirdly, in addition to some of the favourite dishes from the first series, they have a load of new dishes. There are now deliciously crunchy yet succulent salt n pepper oyster mushrooms with pickled mooli and juicy messy prawns, with tamarind and palm sugar…

The meat is insane too. There’s roast pork belly with jaew (a sweet and spicy Lao chili paste), tender flat iron steak salad and awesome fried chicken with a green chilli dip. All the meat was mouthwateringly tender and so full of flavour. And that friend chicken had such a crispy coating, I could have ordered another plate.

If you’re after some heat, the cucumber salad with peanuts and prik nam pla (a thai dipping sauce typically made with Thai fish sauce, birds eye chillies, lime, garlic and brown sugar) is like a slap on the face…in a good way. But be careful, if you’re not into heat, don’t order this. If you are, knock yourself out.

Another hottie is the hot and sour soup. The clue is in the name. You can order it with oyster mushrooms or chicken. This is DAMN tasty! Even struggling with the heat, I couldn’t stop eating it.

The salmon with lardo was salty and rich, yet fresh and pretty damn spicy again.

Ka Pao is serving food Fridays 6pm-late, Saturday 12-3pm & 6pm-late, and Sunday 12-7pm. Bookings are now being taken for August and September so head over to their website.
